Who says students or people who live by themselves have to eat stir fries all the time?
A boned leg of lamb, butterflied out so it would cook more quickly. I poked a few holes in the skin with a sharp knife and inserted garlic cloves that had been cut in half. A good covering of olive oil and sea salt rubbed over the top. Cooked for about 45 minutes in a moderate oven, then left to rest for about 10 minutes. It was about $12 worth of meat, but it will last me for two meals (tomorrow night served cold with baked potato and parsnip, and gravy), and sandwiches.
Served with warm flat bread and Greek yoghurt.
