This time, my own recipes, or recipes that I've adapted. They're easy to make, nice for when you've worked the whole day and don't wanna stand in the kitchen for ages.
Eggplant curry, serves 1
- 200 ml coconut milk
- 100 ml water
- 1 eggplant
- red curry paste (can buy those in a small jar at the DH, near the coconut milk)
- lemon grass (in a small jar as well, right next to the other one)
For multiple persons, double the coconut milk and the water, but get some different veggies. Red bell pepper is very nice with this. Onion's nice too, but that needs to be sauteed in some oil + the curry spices, before adding the water+milk.
- bring coconutmilk + water to a boil
- add red curry paste to taste (if its the panaeng, you'll prolly need lots, since that doesn't seem to be spicy at all)
- add diced veggies and let simmer till veggies are good
- add about 2 teaspoons of lemon grass
You can spice it up a bit with some lime juice and a smidgeon of sugar if you want.
Chili, serves 1
- 1 tin of red beans
- 1 tiny tin of crispy corn
- 250ml passata (half a packet of red sauce)
- chili spices (DH sells 'Saveur Brut', which is really nice)
For multiple persons, double the beans and the red sauce, then add other veggies. Once again, red bell peppers are a winner!
- drain red beans and corn
- ditch everything in a pan, and let simmer
- add more chili spices
- taste some
- add even more chili spices
