Jo vs. Simple, Quick but Good

WEDNESDAY [03/02/11] FOOD LOG

BREAKFAST - Protein & Fruit [430 calories]
Light but filling... fruit and cheese



Whole wheat toast with nut butter and hard boiled egg


SNACK 1 - Water [0 calories]
I wasn't hungry so short of force feeding myself I just drank lots of water... at least lots of water for me.

LUNCH - Chicken Fajita [508 calories]
This is my FAVORITE meal of all time!! It's so easy to make and it is so flavorful the yummy goodness just explodes in your mouth. Seriously! It was so delicious, I HAD to bust a move! No, really, I did. I danced my way through the first few bites, I even hummed a little tune :p



For all it's goodness, it deserves a step by step showcase so here we go... My starter plate


Grilled chicken breast strips atop homemade guacamole spread


1/4 cup black beans


Sautéed bell pepper and onion mix


Roll it up (had to use toothpicks to keep it together)


And eat...Mmmm, delicioso!


SNACK 2 - Pop Secret 100 calorie popcorn [100 calories]
I love the kettle corn.




DINNER - Spaghetti w/homemade pesto sauce [516 calories]
This was such a gorgeous dinner! I used whole wheat thin spaghetti, shrimp, grilled asparagus (best way to make asparagus in my opinion) and roasted cauliflower (also best way to make cauliflower in my opinion). Yummy for my tummy!




Had some sugar snap peas on the side.
