Well, in the Buffy/Angelverses, a soul was something that was shown as being obtained by anyone. There were human souls as well as demon souls (in regards to vamps, just referred to as demons). A human soul was supposed to be able to make one more susceptible to human morality, yes, but not emotions. The heavy hitting vampires that we are shown (Darla, the Master, Spike, Drusilla, Angelus, Harmony) are shown to have code of ethics, as well as a multitude of feelings, including love. They lived by vampire morality for the most part, yes, but having a lack of soul did not render them incapable of love (even though some viewers are convinced otherwise, in spite of what's given in the text).

In addition to that, as shown in both 'verses, a human soul did not make one inherently good and not prone to evil. There are many, many, many examples of human behavior that is tantamount, if not worse, than that of (some) demons.
