Saucy chocolate puddings

100g chocolate chips
25g butter
2 eggs
4 tbsp milk
1 tbsp cocoa
2 tbsp plain flour
3 tbsp sugar

Preheat the oven to 180C/350F. Butter 4 ramekin dishes, and place on a baking sheet.

Place the chocolate and butter in a heatproof bowl, and microwave in 20 second bursts until it starts to soften. Stir with a fork to mix thoroughly, and let cool slightly. (If it gets overcooked, and the chocolate goes stiff and grainy, just add small lumps of softened butter and mix until smooth.)

Separate the eggs. Beat the whites with 1 tbsp sugar until they form stiff peaks. Beat the yolks with the milk and remaining sugar.

Sieve the flour and cocoa together, and mix with the egg yolk mixture. Mix into to the chocolate. Gently fold in the egg whites (a thin-edged silicone spatula is ideal.) Divide between the ramekins, and bake for about 10 mins, until the surface has set.
