Sauce
4 tbsp mayonnaise
2 tbsp grainy mustard
1 tbsp white vinegar
Mix the ingredients together, and place in a small bowl.
Nuggets
350g chicken breast fillets
125g panko breadcrumbs
1 egg
2 tbsp plain flour
1/4 tsp turmeric
Pinch salt
Mix the flour, salt and turmeric together on a flat plate. Beat the egg. Put the bread crumbs on another plate.
Cut the chicken breasts into chunky pieces.
Heat about 5mm deep of oil in a large frying pan over medium high heat.
Turn the chicken pieces in the flour until lightly coated. Dip in the egg, and then the breadcrumbs. Fry for 2-3 mins a side, until golden. Transfer to a warm plate lined with paper towels. Serve with the sauce.
