Oh look: sleet.

It's been an... interesting... few weeks here. Ice storms, snow days, vacation and sick children mean we've been spending a bit more time all together than is really healthy. Today is more miserable weather, and more sickness. Plus I dinged the car last week and am still pissed with myself about that. And slightly homesick and thinking of aging and dead rellies. So, comfort food:

Potato farls

3 large potatoes, mashed. About two cups, I guess. Not too moist - made with a couple of tablespoons of butter and milk.
1 cup plain flour
2 tbsp butter
milk, if needed
extra butter

If using leftovers, heat the potatoes gently, so they're warm and fluffy. Melt the butter, and stir through the potatoes. Mix the flour in, and knead until smooth. Divide into two balls, and flatten into circles about the size of a dinner plate, and about 0.5cm thick. Cut each into quarters, and fry for a couple of minutes on both sides in (still more) butter. They should be golden brown and glistening!

Traditionally served for with rashers, sausages, black pudding, fried tomatoes - and if you're hungry, fried mushrooms, fried soda bread (brown, preferably) and beans - and lashings of hot milky tea. I'm having it with sharp cheddar, grated, and apple sauce (one apple, peeled, chopped, and microwaved; a bit of lemon juice; mashed with a fork. I hate runny foods. Except soup. Mmmm, soup.)

Where I'm homesick for. Looks like a nice day there.

ETA: *sigh* Power outage just as I started to make lunch :(
