Okay, so I am not politically correct, but then, I never have been. If you don't celebrate it, take no offense, just know that my thoughts and prayers are for you having a wonderful time regardless, not trying to convert you.
Saw an interesting tagline the other day, what's more ridiculous, a person who believes in a God they can't see or a person who gets offended by mentioning a God they don't believe in?
Oh the philosophical thoughts of O'dark thirty.
Had a really wonderful day today, started by spending a good deal of time last night at my parent's preparing Lumpia with my Mom, washing, cutting, chopping veggies, mixing it all together with pork sausage then filling the wonton wrappers and storing them for the night. Started pseudo early this morning showering and then taking the pups over so they could get their Grandma fix so they wouldn't be as sad when we left them for the afternoon. So while my Mom and I talked and watched the pups with my brother's new lab (yea I forgot to mention that the other day.) I began the process of deep frying the lumpia for dinner.
Now some may be thinking what the heck is that? There are many different variations of the dish, some call it an appetizer some call it an entree and every recipe seems to be different. I got my first taste of it and the recipe from the wife of a workcenter supervisor I had in the Navy while stationed aboard the USS Midway. It is a Filipino dish and regardless to which recipe you have and follow it is going to be really good. I like mine a little better because it doesn't use cabbage...cabbage makes a great cole slaw and sauerkraut but I don't care for it in my Lumpia.
My Mom also fixed bar-b-que chicken wings and a few other items to go along with lunch. Was almost done when the first of the family started to show up, my youngest neice and her 2 children, so I had to tempt the pups back home so there wouldn't be any problems with them then came back to finish the frying. We ended up making 3 batches, 2 with pork, 1 with hamburger, each batch was about 50 pieces, took about an hour and a half to get all the frying done, never can be too careful about getting the meat fully cook. But shortly after those were done, my youngest brother arrived with his wife and my 2 nephews, followed shortly by my brother between us (the one with the lab) and 2nd oldest neice, her 2 kids, her boyfriend and his daughter from a previous encounter. (I don't know the particulars and rather then cause rumors I will leave it thus.) Followed by my wife after almost everyone has finally gotten their first round of food. Course some of the kids wanted to skip eating and get to the presents, but wisely we err'ed on the side of caution and made them eat first. *laugh* Lord I remember how many times I went through that agonizing process when I was growing up and we went to my Mom's parents for Christmas with her family. So I guess there is something to be said for people exacting revenge on the next generation (or 2 or 3!) *laugh*
But all in all it was a good time and we all ate more then was probably good for us, though later today (Christmas) will be another great dinner, far better then earlier because Mom is going to fry up chicken since no one but I had a request! *laugh* Fried chicken is a big weakness for me...even bad fried chicken is good...well..maybe not good...but edible. Mom's has never been anything but excellent even though as a youth growing up in the back hills of Indiana she had chicken about 90% of the time. Her folks raised chickens as part of their livelyhood and it was rare for them to get beef, pork. Her father trapped and hunted so they did have rabbit and squirrel and other 'things'.
So I am quite obviously anxiously awaiting lunch time! *laugh* But I wanted to get something posted before bed. This post has been brought to you by the letters L, F and M and the number 3.
