So I haven't been able to cook lately being on the road. I managed to shanghai my parents kitchen last night when dad got home from his hip replacement surgery. He claimed he didn't have much of an appetite, but I managed to tempt him into eating.
With their limited kitchen - read mom doesn't know how to cook with spices and herbs - I needed to do something simple and healthy. I settled on some wild salmon that I found at Publix. I baked it skin side up with a little bit of olive oil, ground pepper and dill. I removed the skin and served it with brown rice, green beans, a simple soy sauce/olive oil/ginger sauce and cinnamon apple drop biscuits.
I really wanted to make some chocolate lava cakes for dessert, but I refrained. Ugh. I totally want some. This craving may kill me before I get back from loads of southern/home cooking this weekend at family reunion. I whipped up some totally trashy yet sugary wonderful PTA bars and Chess bars this afternoon after getting off the plane. I also verified the crock pot bbq was defrosting nicely. I will balance the sweets by picking up some fresh veggies and fruit from the farmers market on our way out of town in the morning.
