So I have now been paleo for over a week. only 1 meal that wasn't paleo (gluten free, dairy free pizza because I was too exhausted to cook, and too unwell to drive somewhere and get it).
I have lost about 5 pounds now, likely just in inflammation (when I go off gluten, I automatically loose weight within a few days, but it's not real weight - I gain it back immediately when I eat gluten).
At the naturopath, I weighted 220. I'm not worried at all about weight though, as I am pregnant. So I may or may not loose weight, but as long as I eat well (and feel well), baby and momma will feel better :)
I'm looking forward to the health benefits. Clearer skin, more energy, more physical strength, increased healing, healthy stomach, healthy hormones (reverse some of it's effects),etc.
I was reading my journal about the last time I was paleo and I recall all the wonderful ways it improved my life.
So far, success!
For lunch today, I had chicken cooked in coconut oil, frozen green/yellow beans and carrots cooked with meat, and an amazing berry sauce (frozen berries, maple syrup, garlic, almond oil, balsamic vinegar, sea salt, pepper). So yummy.
For breakfast, I had left over egg drop soup (chicken broth, cabbage, egg cooked in the broth) - I am now realising that egg bothers me and makes me nauseous. So no more egg unless cooked in baked goods (don't seem to bother me there).
and I had a homemade macaroon for dessert :)
I was looking at the recipes for home made ice cream here:
http://eatdrinkpaleo.com.au/how-to-make-ice-cream-in-a-vitamix/ I made some berry ice cream!
3 cups frozen berries, 1 cup coconut milk, 2 tbsp maple syrup. Put it in the vitamix on ice setting and voila (make sure to use the pushy thing, as it sticks together at bottom otherwise). Definitely a success!
