I followed
this recipe almost exactly and oh they were sooo good!! :) Maybe a tiny-tiny bit too sweet. .as I generally don't like sweet things, but not overly sweet for me either, hard to describe. Richard says the sweetness was just right.
2 cups flour
2 tablespoons baking powder
1/2 teaspoon salt
1 cup sugar
1 1/2 cups chopped strawberries
2 eggs
1/2 cup unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
Heat oven to 375 degrees.
Combine flour, baking powder, salt and 1 cup of the sugar in medium bowl.
Toss in strawberries, set aside.
Beat together eggs, butter, milk and vanilla in small bowl.
Add wet ingredients to the dry ingredients; stir until just combined.
Spoon batter into muffin tins (greased or paper cups).
Bake 25 minutes or until a toothpick inserted in middle of muffin comes out clean.
