chewy granola bars

Now that we have a camera again, I'm going to share some recipes. .

These are super yummy but they don't look the best in the photo.



Richard, my friend Marcie, and her husband Alex have tried them and everyone really liked them (I could tell cause they took seconds and thirds, plus told me they were good :)) I just adapted this existing recipe to make them a bit healthier... though they still have a lot of sugar. Oh, the other good thing about these is once they cool down, they really hold a bar shape well for easy toting and traveling.


1 cup firmly packed brown sugar
1/4 cup butter or margarine, softened
1/4 cup white sugar
3 tablespoons honey
1/2 teaspoon vanilla
1 large egg
1 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups readymade granola (I used one with raisins)
2 cups mixed nuts, unsalted (I used peanuts, walnuts, cashews, sunflower seeds)

Preheat oven to 350° and lightly grease or spray 9 x 13 pan. (mine did not fill the pan, maybe they were too thick?)

In large bowl, beat brown sugar, sugar, and butter until light and fluffy.
Blend in honey, vanilla and egg.

In separate bowl, combine flour, cinnamon, baking soda, and salt.

Add flour mixture gradually to sugar mixture and beat until combined.

By hand, stir in nuts and granola until well mixed.

Press mixture firmly in bottom of greased pan (I put parchment paper on top and pressed really hard to make sure it compressed tightly -- remove the paper before baking.)

Bake at 350° for 25 minutes, or until light golden brown.

Cool and cut into bars.
