Main dish recipe
Bits and Pieces Casserole (I refuse to use the term hot dish)

2C Gluten Free bread cubes
1-2 C cubed corned beef
1/4 C olive oil
3 chopped medium parsnips
3 chopped medium carrots
12 chopped crimini mushrooms
1/2 C feta cheese crumbled finely
1/2C asiago & parmesan grated
2 eggs
1/2 C cottage cheese
1.5C stock (chicken, turkey, beef, duck, veg)
satl & pepper to taste

half of the oil in the bottom of your baking dish
Mix eggs, cottage cheese, and stock together
put bread in baking dish
put in vegetables
put in meat
put in mushrooms
salt and pepper to taste
pour on sauce
pour on oil

cover and bake covered at 350 F for 45 mn
pull it out and add cheese on top
put it back in for 15 mn topless. Heh, I said topless.  But then I'll say "golden brown and cispy", that's even better than topless.

Let it stand for about 15 mn before serving

*Substitutions:
Ham for corned beef or really any leftover meat you have.  For a vegetarian dish, sautee tofu chunks dreged in buckwheat flour.
