Turkey Leftovers?

I have to thank Jenn for this idea. Tuckey's made turkey salad one time. I've never made turkey salad, or even chicken salad. The only thing like that is tuna salad.

Jenn mentioned how much she was looking forward to turkey salad sandwiches on Black Friday. I figured I'd give it a shot. I looked around the 'Net for some ideas, and this is what I came up with. Yes, yes, I did run all the ingredients into Excell and did a count of what was used the most. But without further delay...



  • 2 C turkey chopped
  • 2 ribs celery, chopped, with tops
  • 1/4 - 1 C mayonaise
  • 2 green onions chopped
  • 1/2 TB lemon juice
  • 1/2 TB Dijon mustard
  • 1/4 - 1/2 tsp salt
  • 1 TB cider vinegar
  • 1 tsp dill
  • 1 small red onion, chopped
  • 2 TB parsley, chopped
  • hamburger buns

      Basically, combine all ingredients in a bowl. I started with the smallest amount of mayo, and then upped it bit by bit, until it seemed right.

      Put a decent amount of the salad onto each bun. Wrap the sandwich in foil, and put it in a 400 degree oven for about 20 minutes. Serve and enjoy.

      The only issue I had with the recipe, was that I used too much red onion. I normally love onion, red onion even more. However, a medium-sized onion was just way too overpowering. So keep that in mind.

      Tuckey and Angie opted to not have any of it, but Ma said she really liked it much better. She liked it much better in the oven, than regular cold style. Other than the onion, I really liked it.

      And, see, like I said, the next entry wouldn't be all doom and gloom. In fact, there's some good news coming up in the next one. I'd put it here, but I didn't think it would mix with the turkey salad. ;^)
