Mmmmm... Mushrooms!

Well, it's payday, so of course, I decide to treat myself and have a nice evening of cooking ahead of me. On the menu tonight?
Country fried chicken with gravy
Hand mashed potatoes
Sweet and sour tomato salad
Handmade biscuits

I haven't made biscuits in years, honestly, I believe it would have been a fourth grade 4-H competition. They were mayonaise biscuits, and I thought were aweful, but took third place. All other biscuits from that point have been from a can. Hope they turn out well.
Now for the tag line. I've got to share the recipe now, even though I won't taste the results until tomorrow evening. However, the smell of the mushrooms and the marinade was incredible!
Simply Marinated Mushrooms
  • 1 1/2 Pound Mushrooms, stems removed (I used regular sized mushrooms, not button, steak, or shitakes)
  • water
  • 1/4 C. Olive Oil
  • 1 tsp Dried Thyme
  • 1 tsp Salt
  • 3 TB Fresh Lemon Juice
  • 3 tsp Minced Garlic
  • 1/2 tsp Fresh Ground Black Garlic
  • 3 TB Dried Parsley
  • 1/8 tsp Onion Powder
  1. In a large pot, bring enough water to cover the mushrooms to a boil. Add the mushrooms and simmer for 10 minutes. Remove from heat and drain. (I also shocked them with cold water after removing the heat.)
  2. In a large bowl, mix all remaining ingredients. Add the mushrooms, and toss to coat. Chill in the marinade overnight, and reheat to serve.
The smell from just simmering the mushrooms was incredible. I'll post the results after tomorrow evening when I serve them with some wonderfully seared garlic steaks. ._._.
