So for Christmas I got a small pie pan. I asked for it; well, I didn't really, but we were in the store looking at small pie pans and I mentioned to Mom that I don't make pie because a normally-sized-pie is far too much pie for one person, and fiddly to freeze. And so Mom got me a smaller pie pan.
The first pie I tried was coconut custard, which was meh, because I'd forgotten that there's a difference between coconut custard and coconut cream, and what I actually wanted was coconut cream. (It turned out fine, for coconut custard. I'm just not a huge fan.)
But tonight's pie was an en-smallified of Mark Bittman's raspberry pie, made with Trader Joe's frozen raspberries, and it was excellent. I had to eyeball a bit, and the center didn't quite set (maybe I should have waited longer). But the pastry and the filling worked out smashingly well. Definitely a pie to make again. This one was open-top, but I think it'd work well with lattice or a regular top. Maybe that's next. (The one downside of the Bittman crust was that it was fiddlier to work with than my previous recipe, but the crust was sufficiently good that it's worth it.)
Next up: key lime, or maybe a proper coconut cream.
