Thank you for the Beetroot Help!

Thanks to all the beetroot afficianados out there for their suggestions. Roasting seems to be the favourite way of cooking.

Think I'll try this recipe for beetroot penne, which means roasting it first and then mixing with pasta & cream (but think I'll substitute creme fraiche & parmesan.

Also, for ease later in the week think I'll try this Beef & Beetroot casserole in the slow cooker.

I suspect I'll probably get some more next week as I've asked them to exclude the celeriac (yuck) and cabbage & kolrhabi (Jay & cabbage do not mix!), so I'll be able to come back to all your great suggestions then.

Should be interesting to try some new stuff, s I haven't really tried beetroot since the vinegary stuff of childhood.
