Beetroot help!

We've started having an organic veg box again as of today (our last attempts failed due to an overload of cabbage!), and I find myself in possession of two large beetroots.

I have never cooked beetroot in my life, so any suggestions as to recipes etc?

A bit of recipe searching suggests that some kind of beetroot & pasta dish might be a good idea for one of them...
