It's summertime. And it's hot. I love popsicles and I thought it was high time I made some of my own!
It all started when I impulsively bought a honeydew melon at the grocery store. I don't usually pick up melons, but I just wanted one for some reason. After I chopped it up, I couldn't see us eating it all before it turned and then I remembered seeing this recipe a few days prior.
The first popsicle recipe I tried was

First I pureed the melon with some mint, lime juice and simple syrup and then pushed it all through a fine mesh sieve.
Froze them overnight and enjoyed one the next night!
They came out realllly tasty. Gordon was "skeptical at first," but was quickly convinced. I will definitely be making these again. Easy and delicious and quite refreshing on a hot day.
