Basic Vegetable Fried Rice

This is a cheaty (but sufficiently delicious) veggie fried rice. This recipe can be easily divided into smaller servings - it's basically 1 tsp oil and soy sauce per cup of rice. Feel free to add in egg, shrimp, chicken, beef, pork or whatever to it if you want.

INGREDIENTS:

4 cups cooked long grain white rice
4 teaspoons vegetable oil
4 teaspoons reduced-sodium soy sauce
2-3 green onions, thinly sliced
1 cup frozen peas 'n' carrots

Heat oil in large skillet or wok over medium-high heat. Add in rice and soy sauce. Stir-fry together for about 2 minutes. Add in frozen peas 'n carrots. Cook for about four or five minutes or until rice and vegetables are cooked through. Stir in green onion and cook for one to two minutes longer. Eat & enjoy!
