On Sunday, I made all my lunches for the week. I got the recipes from Real Simple but I don't remember when or where or how, so I'm putting them here.
I've tasted them all, of course, but I've only eaten 2 of them so far...the Mediterranean Pasta and the Chicken Pesto Pasta.
So.
Cook a pound of pasta, rinse with cold water, toss with olive oil and refrigerate. Later mix up 1 1/2 c with each of the following variations (I mixed them up then and there):
Mediterranean Pasta:
1/2 c chickpeas
1/2 c argula
1/2 c crumbled feta
2 TBS EVOO
2 tsp fresh lemon juice
Artichoke, Almond, and Parmesan Pasta:
6 jarred artichoke hearts, chopped
2 tBS chopped roasted almonds
2 TBS grates parmesan
2 TBS EVOO
Tuna, Red Onion, and Olive Pasta:
1 3-oz can tuna, drained
1/4 c pitted kalamata olives
2 TBS chopped red onion
2 TBS EVOO
2 tsp red wine vinegar
Asian Pasta Salad:
1 carrot, sliced
1 TBS canola oil
1 TBS chopped roasted peanuts
1 TBS low-sodium soy sauce
1 tsp rice vinegar
Chicken and Pesto Pasta:
1/2 c shredded rotisserie chicken
1/2 c prepared pesto
That last wanted to be heated up...so I did. It made the pesto all runny over the chicken and the pasta and was really, REALLY good. I used a chicken breast that I cooked on the stovetop.
The question: Who else does this and are there any really good recipes or sites I should look at?
