Tomatoes and Other Veggies: What Do You Do With The Excess?

I came across this recipe for Tomato Cobbler this morning and got to thinking this would be a great recipe to have when you have lots of tomatoes coming on in the garden.

Does anyone else have any good or out-of-the-ordinary recipes for using up excess tomatoes?
(Hint: I'm still looking for a really good recipe for Tomato Soup.)
