Sage Question

Every season I say I will grow herbs, but I never get around to it; but this season, I did! I have 2 big mixed boxes with flat leaf parsley, rosemary, lemon balm, bee balm, basil, mint and sage.

I've looked around and can't find info on harvesting sage. Info for all other herbs tells how to harvest while encouraging new growth, but for sage, the best I've got is "pinch leaves as needed" or "harvest whole stem." Umm...ok. I know to cut basil above the second set of leaves on a stem to encourage growth, and to cut back parsley from the outside of the plant with stems that have three or more shoots. Info on these were specific!

With the sage do I just take individual leaves from the top, or bottom? Do I pinch off the tops of stems to help it bush out? Or do I cut off whole stems to encourage it to grow? I'm hoping to have lots of sage, but the vague instructions I've found are no help.
