Deadheading flowers and shearing a plant back?

Hi guys.

I really have no idea how to deadhead a flower or shear a plant back. My coreopsis sunfire is doing well, but the one is starting to get a big shaggy and floppy and would probably do well if I sheared it back, but have NO idea how to do that. I also have no idea how to deadhead. I'm afraid I will kill the plant. Can I deadhead by taking scissors and just trimming off the dead flower? Or do I cut the entire stem off from the base?

Sorry for such a new-b question. I've looked info up on google, but have not found any good reliable answers. And I don't feel confident that I would be doing it right.
