My artichoke is flowering!

After having it about two years (it became a lot happier after the first year, when I took it from the pot and planted it in the garden).

From then it's been pretty happy and seems to take care of itself. Now it has a flower on it! And two smaller ones coming up.

How do I know when to pick it?
