tomatillo question/ID help/some summer pix too

I have two tomatillos, I've never grown them before, I placed them between the tomato patch and the pepper patch, they seem to like to become large sprawling bushes with vine-like branches, I tied them up a bit and they are growing lots of fruit.
Questions...
1- should I allow them to go nuts?
2- when do I pick them- [mine are called purple but they are quite green as of now]
3- any good recipes salsa I know, anything else?
