This refreshing breakfast is a great alternative to the more traditional favorites like omelettes and scrambled eggs.
Lemon-Blueberry Clafouti -- 6 Servings
2 cp fresh or frozen blueberries*
4 eggs
3/4 cp 1% milk
3 tbl honey
2 tbl butter, melted
1 tsp vanilla extract
3 tsp grated lemon peel
Pinch of salt
1/2 cp whole grain pastry flour
Preheat the oven to 350 degrees. Coat a 9" pie plate with cooking spray. Scatter the blueberries in the pie plate and set aside.
In a bowl, whisk together the eggs, milk, honey, butter, vanilla, lemon peel and salt. Stir in the flour until blended. Pour the batter over the blueberries.
Bake for 30-35 mins or just until the clafouti is set in the center. Serve hot.
