How about some kind of trail mix? Dried fruit and nuts and sometimes chocolate chips? Tasty, crunchy, easy to eat, plenty of protein.
Or pie. Pie has lots of butter in the crust, but it doesn't necessarily seem greasy. And pie fillings are mostly fruit, so that's healthy. (Healthier if you make your own pies, of course, because store-bought pies might have tons of sugar.)
Or hummus. With pita chips or with chopped veggies. Healthy, tasty, easy protein. Hummus is actually very easy to make with canned chickpeas, pre-minced garlic, and a blender, so you easily could make your own, say, with more water/less olive oil/less tahini if you find store-bought hummus too greasy.
I second hummous - with pita chips, baked tortilla chips, or veggies. Mmmm, hummous. Also maybe granola and yogurt, or dried apple rings. I like Yves veggie meats as a snack, particularly the veggie ham. Fig newtons. If you're willing to turn on the oven, sweet potato fries are awesome - just cut up some sweet potatoes, toss in olive oil, salt and pepper, and bake them on a cookie sheet in a 425 degree oven until they are soft (45 minutes, maybe, although my oven sucks, so times are weird for me).
I SECOND POPCORN. Also, it boosts serotonin, so it literally makes you happy. :)
I also am partial to the flavored instant oatmeals, particularly the Cinnamon Roll flavor or the fruit and cream ones. These are good because they can be snacks or meals, plus you can add extra cinnamon or fruit or whatever. And, since February is right around the corner, they are great for feedwatching. :))
On the other hand, my insane love of almonds started when my mom started buying them raw and shelled and in bulk and then roasting a cookie sheet worth in the oven. OMG, you do not taste almonds better than that.
(And I prefer air-popped popcorn to any other kind, especially because it then mixes well with everything. I went through a phase where I used it as a rice/potatoes replacement for lazy cooking, ie, I'd have a dinner of pre-cooked chicken, frozen vegetables, and popcorn.)
Do you have a Trader Joe's nearby? They have all sorts of wonderful nuts. Like, pistachios without the shells. Roasted cashews covered in sesame seeds and honey. Marcona almonds with rosemary. Oooooh, it is to love.
I keep string cheese around because it's fun. Sometimes I wrap the cheese in pieces of pepperoni, or, I put it on triscuits. Sometimes ALL 3 TOGETHER,
Kashi bars are very good - I prefer the cranberry/dark chocolate ones. You can find them over by the granola bars.
On the topic of Trader Joe's I would totally recommend some of their dried fruits. Their dried mangos are FANTASTIC, but if you don't like mangos, I'm sure you could find something else there that you like. Dried fruits are good and healthy and pretty snacky too, I think. :)
