A while back, I started attempting classic desserts. I do this kind of thing once a month, on average, because there's a lot of sugar and fat here and I'm a vain bastard... but that also means that if I'm going to have to run more laps for a dessert, that dessert is going to be worth the extra sweat. For Peach Melba, I followed Nigella Lawson's lead,
here. For Bananas Foster, I followed the
original recipe, but doubled up on the dark rum because I couldn't find banana liqueur in the time I had. I don't remember where I found the recipe for Cherries Jubilee, and in any case I improvised from it because I didn't have cornstarch, but it involves ¼ cup sugar, ¼ cup watery OJ (1:1 water to OJ), ½ pound of pitted cherries, ten minutes up simmering, ¼ cup of brandy, ten or fifteen seconds of clear blue flames, and ice cream.)
