The key when it comes to Chicken rice is the rice. It has to be fluffy, flavourful, but it shouldn't leave a film of oil on your tongue. The balance has to be just right.
Next of course is the chilli. It is a mixture of chilli, chicken broth, ginger, garlic, lime juice, salt and pepper all food processed together into a nice blend. It should be spicy but it shouldn't numb your taste buds, the after taste should be a little tangy thanks to the lime juice.
Each spoonful should be a small morsel of chicken (with the skin if you like it), rice and chilli sauce. YUMMERS!
