With the cold rainy weather over here in Singapore today....I would actually love to have a nice big plate of this for lunch. Ultimate comfort food...and actually a quick and easy whip up because the oven does most of the cooking...which leaves one heaps of time to do other stuff...like a yummy tangy orange tea cake (which is exactly what i did...heh).
Economical meal that can be whipped up in a huge batch...and separated into individual portions...packed into containers or ziplock bags and kept in the freezer for a rainy day...LITERALLY!. Classy enough to server to a dinner party....what more can you ask for.
