Tilapia

Just had a happy accident I need to share. My phone wouldn't cooperate in my kitchen's lousy lighting, so I don't have pictures; sorry...

Anyway, I had an urge to make fish tacos, but rather than fry the fish the idea of braising entered my head. So instead of tacos, I made some fish to serve over rice. Here's what I did:

Sauteed 1/2 medium onion - Frenched, three ribs of celery heart - thinly sliced, and four cloves of garlic - thinly sliced with about a tablespoon of olive oil in a non-stick skillet over medium-high heat.

Once onions and celery started to become soft and clear (about 6-8 minutes), added about 1/2 teaspoon each of sea salt, cracked black pepper, cumin, and juice of 1/2 lemon. Tossed until blended.

poured mixture off into bowl and added two approx. 3 oz. Tilapia fillets to pan. Poured celery/onion mixture over top.

Added 1 cup almond milk (I LOVE almond milk) and one bay leaf. Brought to almost boil and reduced heat to low. Simmered about twelve minutes (until fish was cooked).

Removed fish to plate and covered with Aluminum foil tent.

Added 1 box frozen spinach to pan and raised heat to medium. Simmered to "un-freeze" spinach

While spinach was "un-freezing", warmed previously-cooked brown rice in microwave.

served one fillet of tilapia over brown rice and "tonged" celery/spinach mixture over top
