I made a pretty good dinner tonight with lots of veggies as the main stars. I split some wheat rolls and on each half I spead a mix of mustard and mayo with sweet relish. I added baby spinach, tomato slices, mushrooms and havarti. As they were cooking in the panini press, I began to fry some veggie pouches I had prepared earlier. I used two wontons to make a pouch. Inside the pouch I put some angel hair cabbage. I like the finely shredded style of the angel hair cabbage because it cooks quick and gets nice and sweet. I also added in some broccoli and cauliflower slaw with matchstick carrots. I put in several pieces of mozzarella and also some bacon. I fried the pouches and we enjoyed the gooey cheese and salty bacon flavor with the veggies.
