Well we had panini again tonight. I am loving our new panini maker but it does have one side effect I am not too crazy about: you know how when you eat toast and other scratchy stuff you get those little scraped spots under your tongue and little flaps of skin because it got all scraped? Yeah. I gots dat. LOL
Anyways- I like using 'bolillo' rolls to make mini french bread style pizzas and I thought they would be a good type of bread for panini. We lucked out and not only found some bolillo rolls, we found WHEAT bolillos. I hadn't had them before and they were super soft! I filled them with mozzerella and provolone cheese. We put in baby spinach, shredded cabbage and carrots, mushrooms and I like to mix mayo and mustard together to make one simple spread. Well-
they were WONDERFUL! The wheat bolillos tosted nicely and in the process got a little sweet taste in the process. VERRA nice! I served them cut on the bias with a side of baby spinach topped with guacamole and sour cream to dip them in. Crunchy outside but still retaining a wee bit of softness and it all came together nicely. No one missed the meat I hadn't put in these panini. Does anyone have suggestions for other cheeses that are good on panini? We have used mozzarella, provolone, havarti and muenster.
The best part of serving them on paper plates? Less dishes! HAHA!
Oh yeah, I thought I should mention this-
a friend on Facebook told me that it sounds odd but apparently it is REALLY tasty to make dark chocolate and mozzarella panini!
I am daring, but I dunno about pairing chocolate and cheese! LOL
