Okonomiyaki, spring rolls and fried rice! mmmm

Last night after watching Bizarre Foods with Andrew Zimmern in Japan, it put me in the mood again for asian foods.
I made my fiance a bento for his lunch today as I was making our dinner.
His bento had some of last night's spring rolls and some sushi rolls with soy wrappers. I'm waiting for my sushi making stuff to come in so my rolls will come out nicer looking. The soy wrappers taste great but are super delicate to work with. The filling was rice, carrots, cucumbers, baby spinach and lobster with a mayo and unagi sauge dressing.
I made spring rolls to start us off. They are filled with baby spinach, finely shredded angel hair style cabbages and matchstick strips of carrot. I shredded some lobster meat and I put in some dressing made from some mayo mixed with a bit of the unagi eel sauce. It gave them a nice tang.
I made some okonomiyaki- a little different than traditional style. I mixed some water with a bit of pancake mix. I added in some shoyu, a bit of black pepper and garlic powder. I added in finely chopped green onion, angel hair shredded cabbages and matchstick carrots. I added one egg. I added in small salad shrimp and bonito flakes. Instead of adding cheese to the middle, I put in small diced pieces of mozzarella. My fiance LOVES cheese. LOL
When I ladled the batter onto the grill, I also topped each with bits of bacon- not cooked all the way so it would finish cooking on the grill. As they were cooking, I used the bacon drippings to stir fry the white rice I had set to the side. I made fried rice by adding some shoyu and frozen peas and carrots and then a bit of fried egg. The bacon flavoring made the rice extra tasty! MMMM
Simple stuff but really good. I ate my okonomiyaki plain but Fred ate his topped with the mayo/unagi dressing and some shredded lobster.
