I've never posted here before. Mostly because I think most of you must be photographers who like to cook. My pictures never look as good as any I see on here. We do have bad lighting in our house though so I'm blaming that.
I had to share my Christmas dinner though. I've mostly taught myself to cook since I had my first baby almost 4 years ago and I think I've come a long way. This was my 2nd Christmas dinner and my first vegetarian. I'll post the photo under a cut since it's a bit blurry and rubbish!I didn't use a single recipe and it was delicious! I'll definitely make it again!
I didn't use a recipe and I don't do measuring cups unless I'm baking so I'll just describe it. It's a leek risotto for which I made a soffrito, then put a glass of dry white in after the risotto, then vegetable stock till it's ready. I out in salt, pepper, thyme, and chives and I fried the leeks separately and added it at the end. Then put like half a stick of butter and a handful of parmesan in and let it sit for 5 mins. I baked the squash for an hour with salt,pepper, nutmeg and olive oil. I cubed the potatoes and boiled them just for a few minutes. Then baked them with olive oil, garlic, sage, and rosemary. And champagne to boot! Well, technically sparkling wine I suppose, but it is Moet and Chandon, but Californian grapes.
This is some white and chocolate swirled short bread which I made from a Green and Blacks cook book. It's fairly simple. Just white shortbread and chocolate shortbread rolled up together with dark chocolate chips and sliced and baked.
