"White" Pizza: roasted red pepper alfredo sauce, mozarella, herb marinated chicken breast, red onion and broccoli on a whole wheat crust. Yum.
For the sauce, I found a very simple alfredo sauce recipe online and just slightly tweaked it to add the roasted red peppers:
Roasted Red Pepper Alfredo Sauce
1 pint heavy cream
1/2 cup (1 stick) butter, softened
1 cup freshly grated Parmigiano-Reggiano
1 large or 2 medium roasted red bell peppers (I used 1 large pepper from a jar)
Freshly cracked black pepper & salt, to taste
Heat cream over low-medium heat in a deep saute pan. Add butter and whisk gently until melted. Sprinkle in Parmigiano-Reggiano cheese and stir until incorporated. Season with freshly cracked black pepper and salt to tase. Remove sauce from heat and allow to cool slightly. Once cooled, pour sauce into food processor. Add roasted red peppers and blend until you reach your desired consistency. (I like to leave mine slightly chunky.)
Yum. Great with pasta, or on pizza! If pressed for time, you can always dress up your favorite jar of alfredo sauce with a few roasted reds in the food processor. No one will ever know the difference!
