A colleague of mine is a hunter, and plans to get me some fresh wood-duck breast meat as soon as he has some. He insists it's the tastiest, though he wasn't able to tell me anything about preparing it.

I have LOVED duck breast that I've had when out to eat at some very nice restaurants (one in particular I remember with a dried cherry sauce), but I have never prepared it myself.

I'm looking online for recipes and general preparation instructions, and am too overwhelmed by options to just randomly pick something, so I'd love to instead pick through the experience of folks here.

Can anyone here tell me of YOUR favorite way to prepare fresh duck breast meat.  Also, having no experience with cooking this or any other type of wild game, is there anything I should know to be careful of while preparing this - always do this, never do that, etc.
