Labor Day Feast

Our Labor Day dinner went smashingly. The food we brought was a big hit and I was only able to snap two photos before it was all ravenously devoured. I didn't even have time to take a photo of the sweet potato fries, but I got one of the mango salsa and one of the raspberry peach pie, which turned out REALLY well for an experiment.

What's in the mango salsa? I see mango, green onions, and what looks like red peppers (bell?) and cilantro.

2 cups mango
1 cup red bell pepper
2 1/3 cup chopped green onions
1/4 cup cilantro
2 tbsp lime juice
4 teaspoons olive oil

Mix all ingredients together. Season to taste with salt and pepper. Cover and refrigerate for 3-6 hours.

We didn't add any salt or pepper and refrigerated it for four hours. Even with a double batch, 12 people polished it off easily.

I just posted the salsa recipe above. The pie was really simple. Just use your favorite double crust recipe (or cheat like I did and use two frozen pie crusts) and make the filling like this ( ... )
