Labor Day Feast
Our Labor Day dinner went smashingly. The food we brought was a big hit and I was only able to snap two photos before it was all ravenously devoured. I didn't even have time to take a photo of the sweet potato fries, but I got one of the mango salsa and one of the raspberry peach pie, which turned out REALLY well for an experiment.
This looked so pretty and it tasted even better. It's a super simple recipe that my boyfriend got from one of his fraternity brothers who is from Malawi. As my boyfriend says, "When an African gives you a mango recipe, you know it's gotta be good." ^_^
The pie turned out fabulously as well. I think if I had to do it over again and actually plan it out, I would only put in 1/4 raspberries and 3/4 peaches. The raspberries overwhelmed some of the better flavors of the peaches, but it was still delicious!
The past three days has made me wish that every weekend was Labor Day weekend!
