Making Basic Chinese Chicken and Pork Stock

In order to make really good Chinese soups, it helps to start with really good Chinese style chicken and pork stock.

And it really isn't that hard, especially if you don't mind taking a little extra time on a weekend in order to make a lot of it to freeze for later.

You just need some pork bones and meat, chicken bones and meat, some scallions, ginger and carrots, some soy sauce and Shao Hsing wine or dry sherry.

That is it.

What you get out of it in the end is a basic stock that can be used in a myriad of Chinese soups, braised dishes or sauces.
