What to do with this much chocolate?

Hi all!
I may well have the best problem anyone ever had- thanks to a wonderful former intern whose father works for Hershey's, I have too much Scharffen Berger chocolate(extra dark, bittersweet, semi-sweet, AND milk varieties) and am blanking on good ways to use it up.


I'm thinking mole sauce, and I'd like to try using the extra dark and some chilies to make a dark chocolate/chili ice cream- but how would I do that? In the past two weeks, I've made avocado, black pepper, and raspberry-peach ice creams or sorbets- but I'm not confection-savvy enough to know how to tackle this, and Google's giving me a wild range of recipes. I'd love to start with something a real person can vouch for.

What's your favorite chocolate-using recipe?
