Cheaters Goulash

This is one of my favorite recipes because it is so easy and quick to make, and really delicious... and it's one of my partners favorite meals because it really is delicious, and is a great hearty winter food (for those on the underside of the globe!)

Ingredients:
500g lean beef strips
1 med brown onion, cut into small wedges
Mushrooms, sliced (I can't remember the exact quantity, I use about 10 - 15 mushrooms, which is quite a lot for the recipe, simply because we both love mushrooms).
1 Can crushed tomatoes
1 small (300ml) can condensed/concentrated tomato soup
1 tbsp Paprika
Oil
Fresh Continental parsley and sour cream to serve

Cooking:
* Heat a little oil in a large pan and brown the meat in small batches, then set aside
* Once all the meat has been browned, add a little more oil to the pan and toss in the onions and mushrooms, stir fry until they begin to soften.
* Add the paprika and continue stir frying for a minute or two
* Add the soup, and crushed tomatoes, bring to the boil and then reduce to a simmer.
* Simmer for about 10 or 15 minutes
* Return meat to pan to reheat and finish cooking about 5 minutes before serving.
* I serve this over mashed potato, but it would also be good with rice or pasta as a side dish.
* Top with finely chopped parsley and a dollop of sour cream to serve.
