Spicy Shrimp Sauce

Spicy Summer Shrimp Sauce

Ingredients
2 pints grape tomatoes
1 red bell pepper, seeded and chopped roughly
1 jalapeño, seeded and chopped roughly
1 1/4 pounds of medium sized shrimp
Juice of 1 lime
1/2 teaspoon chipotle chili powder
1/4 teaspoon each of white ground pepper, granulated onion, and dried oregano
2 cloves of garlic, minced
A few dashes of your favorite hot sauce
Salt and pepper to taste

Method
Preheat an oven to 400 degrees
1. Using a food processor, chop the red bell pepper and jalapeño into small pieces. Remove and place into oven-safe dish.
2. Use the same processor to chop the tomatoes just until their skins are broken, but still mostly intact. Add to dish.
3. Peel and wash shrimp and add to dish along with all spices, salt and pepper, hot sauce and the lime juice. Toss to combine.
4. Place into oven and bake for 10-15 minutes, or until shrimp is just cooked through and pink.
5. Remove from oven and toss in minced garlic. (Option: If desired, garlic can be added to dish and cooked in the oven for a more mellow taste)

Serve sauce over pasta or rice. Serves 2-3 as an entrée.
