Veggie side dish ideas?

This is going to sound like kind of an odd question, but I need some ideas of side dishes that involve vegetables and fruit. To put it bluntly, my husband and I eat like crud. Admittedly, it's good-tasting crud, but it's not exactly healthy. Given I've been having some rather worrying health issues lately, I'm trying to take care of this ( Read more... )

Yep, frozen vegs are a great, actually.. the one caveat I'd offer is that they often need much LESS cooking time than the instructions on the bag say.

Experiment a little, try out different veggies and fruits. Fruits and veggies don't have to be the same all the time. For example, I've come to love mango, pinapple, raspberries, etc. Just chopped up and mixed together tastes good to me. I love simple marinated and grilled/baked chopped veggies that my mother makes for the family: yellow squash, zuchinni,bellpeppers,etc. I love making a salad of beans and salsa. Try mixing in veggies with pasta and other combinations! Good luck! I like to make veggie stir fries with quinoa. It's a good way to shoehorn a bunch of veggies into one dish and there's a lot of opportunity for variety. Plus you get the quinoa, a high protein grain.

Try popping vegetables into allrecipes.com's ingredient search - last night I turned a head of cauliflower (good, but ho-hum) into an INCREDIBLE baked dish, using just a touch of mayo, butter and parmesan! It's a good way to make veggies less boring. I also love to partially-cook frozen vegs like lima beans, brussel sprouts, carrots, etc and then fry them for a bit with a touch of butter and lots of spices, especially paprika and rosemary, at high heat levels until they are kind of blackened.. But then those are my own taste preferences ;)
