My mom used to make falafels every now and then, back when I lived with her, with a tahini sauce that was delightful. I think it was just tahini with salt, lemon juice, and maybe a bit of garlic powder. I don't have the recipe in front of me, so I'm iffy on all the ingredients.

But anyway. I recently got it into my head to make falafels on my own, and I sent my boyfriend to go get the tahini from Whole Foods. I was making the sauce and I taste-tested it and it tasted NOTHING like what my mom's sauce was. (i.e. HORRIBLE)

Which doesn't make much sense to me because I asked her for the recipe.

Now here's my question. I think the tahini my boyfriend bought was unroasted sesame seeds. Would it taste better if I used roasted? I don't remember what my mom uses.

P.S.

Someone posted in one of my food communities (don't know which; I look at them all on the same friends list) about french fries they'd made, recently, and it made me want to make some. Problem is that I'm horribly unimaginative as to what would be good with them. I'm reluctant to just do the whole "burger and fries" thing. Sooo... ideas?
