On a day much like today (okay, it was today), a coworker brought me a bag of freakishly large yellow squash.
And while I love yellow squash as much as the next person (moreso, since my girlfriend hates them), this is a bit much for one person to consume. The only way I ever eat them is raw in salads or sauteed with onions on the stove. I know there have to be better ways to deal with the likes of these Squashes of Unusually Large Proportions, and I was hoping you guys might have some suggestions.
NOTE: I am a vegetarian who is allergic to cheese, so please keep that in mind.
I'm hoping you can help me, FoodPornsters, because a squash is a terrible thing to waste.
