Just wanted to share the delicious appetizer platter my husband and I are enjoying tonight!
So easy, delicious, and much healthier than the crap you get at the bar. The menu is shrimp, jalapeno poppers, chicken strips, and pizza rolls.
The shrimp were easy... just tiger shrimp dipped in egg with a little pepper and hot sauce for flavour, then dipped in seasoned breadcrumbs. This time I pan fried them in olive oil, but they are just as yummy baked for ten minutes.
The next item was just as simple- chicken breast strips prepared the same way but baked for 30 minutes.
The pizza rolls are light and delicious- won ton wrappers around tomato sauce, vegetarian pepperoni, light mozzarella cheese, and your veggies of choice (in our case, onions and green peppers). Then they are pan fried lightly in oil. No need to break out your deep fryer- these are delicious and much lower in fat!
I love jalapeno poppers. However, I don't love the fat and calories that come with them! So using a recipe I got from Hungrygirl.com, I made my own. I bought four small jalapeno peppers at the store, and removed the tops and seeds. Then I filled them with a mixture of fat free cream cheese, fresh ground pepper, and shredded mozzarella. Then they were dipped in egg and breadcrumbs as well and baked for 25 minutes. The longer you bake them, the less spicy they are. At 25 minutes, they pack quite a punch!
So, next time you have a craving for something naughty, have it... just be smart about it!
