I had a really nice brunch today, I thought I'd take a picture of it.
Ingredients:
(Serves one)
1/3 of a small green pepper
small amount of onion
sprinkling of dried thyme
1 cooked rasher of bacon, cut into pieces
2 medium free range eggs
pinch of salt (I won't use salt next time if I use bacon again)
2 teaspoons olive oil
1 clove garlic, crushed
herb salad and buttered toast to accompany
What I did:
Chopped the green pepper and onion into small chunks and microwaved in a container with a loose lid for 1 minute to soften. Beat the eggs and added the thyme, salt, and crushed garlic. Heated the oil in a small saucepan (a small frying pan would have been better, I'll pick one up sometime) on a medium/high heat, poured in the egg mixture and sprinkled in the onion, pepper and bacon. Turned the heat down and kept lifting the edges up so they wouldn't stick (and noticed again how an omelette pan would make things a lot easier) until the egg at the top had mostly set. Served folded over with a little bit of herb salad and some wholemeal buttered toast.
