In attempt to eat healthier I've been trying to cook more for my husband and myself. Thus I consult the
Moosewood Cookbook.(thank you
wendywoowho for reminding me about the book!) Tonight I made the "Gypsy Soup" which contains sweet potatoes (to die), garlic, onion, red pepper, tomato, celery, chickpeas, and I added corn to the recipe. I also made red snapper in a dijon mustard marinade. The soup is totally vegetarian as it calls for water rather than broth and the veggies do all the work! With a mish-mash of salt and spices I also added lemon juice and tapatio sauce for kick. I love recipes like this because you can adapt it as you go along.
Leftovers of the soup will make nice lunches for Thomas the next few days (if they make it through the night)
